Baked brie with cherry preserves

If you share my love of cheese, you know that a good brie is a small piece of heaven. But if you haven’t tried baked brie, I urge that you do.

The brie that works best for this recipe is a sweet triple creme rather than some of the sharper cousins.

You will need:

1 sheet of puff pastry

1 round of brie

1 egg, beaten

3-4 table spoons of your favorite preserves (I used sour cherry), or you can saute apples and cinnamon or any other fruit or berries to your preference

Preheat oven to 375F.

On a floured surface, roll out pastry dough until thin, about 1/4 inch.

Place brie in the center, and top with preserves.

Carefully fold the puff pastry around the brie.

Brush the top with beaten egg and place in the oven for about 20 minutes or until the puff pastry is golden brown.

Serve warm with crackers.
